The two homebrew routes serve different hardware and different goals. For many people the choice is made automatically by their model, but it helps to understand why.
When the choice is made for you
If you own a Slim CECH-30xx or a Super Slim CECH-40xx, your only option is PS3HEN. These consoles cannot accept permanent custom firmware, so this is the path you will follow.
When you can choose
If you own a Fat model or a Slim up to CECH-25xx, you can run full CFW. Most people on compatible hardware prefer CFW because it is permanent and more capable.
